Sauteed Radishes with Spinach and Red Onion

(Spring, 2016)

A variation from Food Network

Serves 4

Prep/Cook Time; 15 minutes



2 bunches of radishes, trimmed and halved, or sliced as you wish

1 red onion, sliced

olive oil

salt and pepper to taste

5 ounces baby spinach (remove large stems, if you prefer)

1/2 lemon, juiced



1.  Cook radishes and red onion in a skillet heated wtih olive oil over medium-high heat, stirring, until tender, about 8 minutes.  Season with salt and pepper.


2.  Stir in baby spinach and lemon juice; cook until the spinach is wilted, about 1 minute. 


3.  Season to taste.
